Chicken Tajine With Veg
A chicken tajine is a traditional Moroccan dish made with chicken, vegetables, and spices, and cooked in a tajine pot. The tajine pot is a traditional Moroccan cooking vessel with a conical lid that helps to trap in heat and moisture, resulting in tender, flavorful dishes.
Here is a recipe for a classic chicken tajine:
1 whole chicken, cut into pieces
1 onion, finely diced
3 cloves garlic, minced
1 cup chicken broth
1 cup diced tomatoes
1 cup diced carrots
1 cup diced potatoes
1 cup green olives
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1 tsp ground ginger
1/2 tsp turmeric
1/2 tsp ground cinnamon
salt and pepper, to taste
In a tajine pot or large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is translucent.
Add the chicken to the pot and cook until it is browned on all sides.
Add the chicken broth, tomatoes, carrots, potatoes, olives, cumin, paprika, ginger, turmeric, and cinnamon to the pot. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and cover the pot with the conical lid.
Simmer the tajine for 1-2 hours, or until the chicken is cooked through and the vegetables are tender.
Season the tajine with salt and pepper to taste, and serve hot.
