Zaalouk Or Grilled eggplant Salad(Cold/Hot)

Zaalouk is a traditional Moroccan salad made with roasted eggplant, tomatoes, and spices. Here is a recipe you can try: Ingredients:

  • 1 large eggplant

  • 2 tomatoes

  • 1 clove of garlic, minced

  • 1 tablespoon of tomato paste

  • 1 teaspoon of cumin

  • 1 teaspoon of paprika

  • Salt and pepper, to taste

  • Olive oil

  • Chopped fresh parsley, for garnish

Instructions:

  1. Preheat your grill or broiler to high heat.

  2. Cut the eggplant into slices, about 1/4 inch thick. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

  3. Grill or broil the eggplant slices for about 5-7 minutes on each side, or until they are tender and slightly charred.

  4. Allow the eggplant to cool, then chop it into small pieces.

  5. In a pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.

  6. Add the chopped tomatoes, tomato paste, cumin, paprika, and salt and pepper to the pan. Cook for about 5-7 minutes, or until the tomatoes are soft and the mixture is well combined.

  7. Stir in the chopped eggplant and cook for an additional 2-3 minutes.

  8. Garnish the zaalouk with chopped parsley and serve warm or at room temperature.
