Zaalouk is a traditional Moroccan salad made with roasted eggplant, tomatoes, and spices. Here is a recipe you can try:
Ingredients:
1 large eggplant
2 tomatoes
1 clove of garlic, minced
1 tablespoon of tomato paste
1 teaspoon of cumin
1 teaspoon of paprika
Salt and pepper, to taste
Olive oil
Chopped fresh parsley, for garnish
Instructions:
Preheat your grill or broiler to high heat.
Cut the eggplant into slices, about 1/4 inch thick. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
Grill or broil the eggplant slices for about 5-7 minutes on each side, or until they are tender and slightly charred.
Allow the eggplant to cool, then chop it into small pieces.
In a pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.
Add the chopped tomatoes, tomato paste, cumin, paprika, and salt and pepper to the pan. Cook for about 5-7 minutes, or until the tomatoes are soft and the mixture is well combined.
Stir in the chopped eggplant and cook for an additional 2-3 minutes.
Garnish the zaalouk with chopped parsley and serve warm or at room temperature.
