The Famous Harira Soup (Moroccan)

Harira is a traditional Moroccan soup that is typically made with a combination of lentils, chickpeas, and beef or lamb. Here is a recipe you can try:

Ingredients:

  • 1 pound beef or lamb, cut into small pieces

  • 1/2 cup lentils, rinsed

  • 1/2 cup chickpeas, soaked overnight and drained

  • 1 onion, diced

  • 3 cloves of garlic, minced

  • 1 teaspoon of black pepper

  • 1 teaspoon of Saffran

  • 1/2 teaspoon of cinnamon

  • 1/4 teaspoon of ground ginger

  • Salt and pepper, to taste

  • 4 cups of chicken or beef broth

  • 1 cup of canned crushed tomatoes

  • 1/2 BT of chopped fresh parsley

  • 1/2 BT of chopped fresh cilantro

  • Juice of 1 lemon

  • 1/4 cup of broken vermicelli noodles

  • Chopped fresh parsley, for garnish

Instructions:

  1. In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion,Saffran , chopped parsley, and coriander celery and cook for about 20 minutes, or until the onion is translucent.

  2. Add the minced garlic, Black pepper, cinnamon, and ginger to the pot. Cook for about 1 minute, or until fragrant.

  3. Add the beef or lamb to the pot and cook for about 5 minutes, or until the meat is browned on all sides.

  4. Add the lentils, chickpeas, broth, crushed tomatoes, parsley, cilantro, and lemon juice to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about 1 hour, or until the lentils and chickpeas are tender.

  5. Stir in the vermicelli noodles and cook for

5-7 minutes, or until the noodles are cooked.

  1. Garnish the harira with chopped parsley and serve warm.
